I’m a sucker for just about anything that mixes apple and cinnamon. As a kid my parents often bought apple cinnamon flautas, which I ate in large numbers quite often. These Baked Apple Cinnamon Chimichangas by La Cocina de Leslie, which are a baked version of the fried ones posted over at Jaunita’s Cocina, remind me a lot of those flautas.
I can’t wait to try this recipe. It’s been over a decade since I’ve had apple-cinnamon in a tortilla, and these look extremely promising.
